I like to call this the Mez’colada?
Some old fashioned things are hard to resist – like sunshine and fresh air and cobalt clear blue sky views above you. Then add a tropical cocktail and all is right with the world.

A twist (or deconstructed who knows ??♀️) on a Piña Colada seemed the perfect sip to take that all in ☀️
Mez’colada
Ingredients:
50ml Mezcal
20ml lime juice
50ml pineapple juice
15ml toasted coconut and cinnamon syrup
Shake all with ice and strain into a glass filled with crushed ice. Garnish with lime twist and bloom. This Mezcal cocktail is refreshing and a great twist on the classic, more creamy version of a Pina Colada.
Making the syrup at home:
Add a handful of coconut flakes to a pan and toast on medium heat. Remove and add to a saucepan with a cup of water and a cup of caster sugar. Add a cinnamon stick. Leave to simmer on medium heat for 10 minutes. Allow to cool and bottle. Store in the fridge for up to 2 weeks.
